Edible Amaranth

The Edible Amaranth has primarily green leaves color most of the year. But in the summer, the leaves turned it’s color, displaying hues of red, yellow and green. This multi-colored spectacle is why the plant is also known as Joseph’s Coat, referring to the biblical story of Joseph and his coat of many colors.

The purple flowers that adorn this small shrub are valued for their decorative purposes but also as an ingredient in food and herbal medicines. The leaves of amaranth plants are edible too, used as a cooked leafy vegetable in cuisines worldwide.
